The Soul of Pesto: Between History and Legend

Pesto is not just a sauce; it is a centuries-long love story that smells of land and sea. Its roots run deep into the heart of the 19th century, inspired by the ancient medieval custom of pounding herbs to heal the spirit and enhance the flavors of food. The modern recipe finds its first and moving written record in 1870, thanks to the pen of Giovanni Battista Ratto in his historic volume “La Cucina Genovese.”

It is said that, within the silent walls of the convent of San Basilio in Prà, a monk gathered the wild basil growing on its hillside and carefully pounded it together with a few other ingredients, creating a fragrant elixir that tasted like a miracle. Others, however, trace its origins even further back in time, to the legendary moretum of the Romans celebrated by Virgil.

Making traditional pesto is an act of patience, an almost sacred ritual: the cold marble of the mortar meets the warmth of the wooden pestle. It is in this slow, rhythmic motion that the basil, garlic, pine nuts, cheese, and extra-virgin olive oil blend together, not only to bring a recipe to life, but to awaken a millennia-old emotion.

In caso di impossibilità a svolgere l’uscita giornaliera in mare, causa mareggiata o piogge forti, l’organizzatore potrà decidere di rimandare l’uscita ad un’altra data da concordare con il cliente in base alla disponibilità della barca. In alternativa è possibile richiedere il rimborso di quanto versato
In caso di annullamento da parte del cliente
Fino a 60 giorni prima della data di imbarco non è prevista alcuna penale
Da 59 a 30 giorni prima della data di imbarco verrà trattenuto il 30% di penale
Da 29 a 15 giorni prima della data di imbarco verrà trattenuto il 50% di penale
A meno di 15 giorni dalla data di imbarco verrà trattenuto l’importo totale
In caso di NON Show verrà trattenuto l’importo totale
In caso di annullamento da parte dell’organizzatore verrà restituito l’intero importo versato
